Here is an alternative to handheld tacos, the taco pie. Same ingredients but intended to be eaten with a fork. And easy to make. The mashed potato shell works well with the ground beef and other components.
Ingredients:
- 1/4 cup butter
- 2/3 cup milk
- 1 envelope taco seasoning
- 1 small box mashed potato flakes
- 1 pound lean ground beef
- 1/2 cup onion - finely chopped
- 1/2 cup red salsa (try making your own!)
- 1 cup shredded lettuce
- 1 medium chopped fresh tomato
- 1 cup shredded taco cheese
- Sour cream
Directions:
Heat oven to 350 F. Melt butter in a medium sauce pan. Add milk and 2 tablespoon taco seasoning.
Remove from heat and add potato flakes and stir. Press mixture into the bottom of a 10-inch pan. Bake for 7-10 minutes until it just starts to turn light brown.
Meanwhile cook beef and onions until browned. Drain any fat. Add salsa and the rest of the taco seasoning. Simmer over medium heat for a few minutes then pour the mixture into the crust and bake for about 15 minutes.
Let cool and serve. Top with a layer of sour cream (and/or mashed avocados), cheese, lettuce, and tomatoes. Cut into wedges and serve.

TACO TIPS:
I ran across this invention a couple of years ago, it's called the Taco Standup. The inventor is a nice guy named Nick Dominguez. Nick came up with a way to hold your taco shells upright while filling them. Seriously, I can't figure out why the person who invented tacos made them with a pointy bottom but as much as I like the taste I've never enjoyed the mess of eating them when they fall over and all of the stuff inside lands anywhere but my mouth. As soon as I saw these I had to buy a set so I bought a set of six. Paraphrasing AMEX, "don't make tacos without them". You can get them directly from Nick at Taco Stand Up
